BOUDIN KING CAKE RECIPE: A Mardi Gras Savory Dish

The carnival season is upon us; it is Mardi Gras time, and a special tradition for the occasion is a Mardi Gras King Cake! It all started when Robert Carriker, a history teacher at the University of Louisiana at Lafayette, posted his original recipe for Boudin King Cake on his website. The Boudin King Cake recipe, which features Steen's cane syrup and Cracklin Crumbs on top of the king cake, went viral and can now even be purchased at the Cajun Market Donut Company. 2 (8 oz) cans Pillsbury crescent dough sheets

1 (8 oz) block of pepper jack cheese

chopped green onions

1/2 cup red pepper jelly

bacon bits

3 links of boudin (cajun boudin sausage)

1 large egg (for egg wash)

Preheat the oven to 350 degrees F. Cut the boudin links length of boudin casing with sharp pairing knife. Remove the casing and slice the filling length-wise to wedge chunks of the pepper jack cheese inside the tube length meat along the length of the tube. Push down on the meat to totally encase the cheese. On a piece of parchment paper place dough, after unrolled on the sheet that has a lightly floured surface. Place the boudin cylinders on the edge of the dough and roll the dough around the meat. Pinch the ends close and repeat on the other links.

Spray nonstick cooking spray on a large baking sheet and place dough on the baking tray. Now join the dough-wrapped boudin cylinders together making an oval shape by connecting the ends together. Brush dough with egg wash with a pastry brush and sprinkle with creole seasoning. Bake for 40 minutes or until golden brown. Remove and cool.

While the dough is baking, make the glaze in a small saucepan over medium heat. Add red pepper and cook until it begins to melt, around 2 to 3 minutes. Once melted, add a TBS of warm water to thin out the mixture and keep warm on a very low heat.

Once the boudin king cake has cooled, spoon glaze over the top and sprinkle with green onions and bacon bits on top of the cake.
